Tomato Sauce

This tomato paste is very simple with just 2 main ingredients. I use this sauce with ravioli.

Serves 4

Ingredients:

  • 10-15 garlic cloves
  • 1 tablespoon tomato concentrate (kunserva)
  • 1 can tomato passata (300-400ml)
  • 1 tablespoons olive oil
  • Pepper
  • 1/2 teaspoon Sugar
  • Chicken seasoning cube
  • Parmesan cheese ( optional)

Method:

  1. Slice the garlic into big chunks.
  2. Warm the oil in a pan and reduce heat.
  3. Add the garlic and simmer for a few minutes. Be careful not to burn the garlic.
  4. Ad the tomato concentrate and passata, together with the sugar, the chicken cube crumbs and some water.
  5. Cook on slow heart until it's thick for around 30 minutes.
  6. Steve on top of pasta with parmesan shavings.

  1. I make it almost exactly the same way! In summer i use fresh tomatoes instead of passata, and sometimes i use polpa instead of passata. Also i only use salt, not seasoning cubes. and when it's in season i add some raw fresh basil right at the end!
